We have put together an incredibly limited, very special package of Library Vintage Sparkling wines for this Holiday Season.  These are some of our very favorite sparkling wines that we have been patiently aging in our Library. When it comes to vintage sparkling wine, the process of aging can be separated into two distinct categories. The first is when the wine is en tirage (resting on lees in bottle after secondary fermentation), and the second is where traditional "bottle aging" takes place under cork, post disgorgement. Both time periods impart a distinct quality to sparkling wine and both warrant further exploration. We have been lucky enough to be able to explore both of these concepts when it comes to our sparkling wine production and we wanted to be able to share this experience with you as well.
